Ingredients
- 6 cups corn kernels (about 6 ears fresh corn or 2 cans, drained)
- 1/3 cup mayonnaise
- 1/3 cup sour cream
- 1 tablespoon fresh lime juice
- 1 teaspoon lime zest
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup cotija cheese, crumbled
- 1/4 cup fresh cilantro, chopped
- 1 jalapeño, finely diced (optional)
Instructions
- Heat a large skillet over medium-high heat and add the corn kernels.
- Cook the corn for 8–10 minutes, stirring occasionally, until lightly charred in spots.
- Transfer the corn to a large mixing bowl and let it cool slightly.
- In a separate bowl, whisk together mayonnaise, sour cream, lime juice, lime zest, chili powder, smoked paprika, garlic powder, salt, and black pepper.
- Pour the dressing over the corn and mix until evenly coated.
- Fold in cotija cheese, cilantro, and jalapeño if using.
- Taste and adjust seasoning as needed.
- Serve immediately or chill for 30 minutes for enhanced flavor.

- You can use frozen corn (thawed and dried) instead of fresh corn.
