Description

Ingredients

  • 6 cups corn kernels (about 6 ears fresh corn or 2 cans, drained)
  • 1/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1 tablespoon fresh lime juice
  • 1 teaspoon lime zest
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup cotija cheese, crumbled
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, finely diced (optional)

Instructions

  1. Heat a large skillet over medium-high heat and add the corn kernels.
  2. Cook the corn for 8–10 minutes, stirring occasionally, until lightly charred in spots.
  3. Transfer the corn to a large mixing bowl and let it cool slightly.
  4. In a separate bowl, whisk together mayonnaise, sour cream, lime juice, lime zest, chili powder, smoked paprika, garlic powder, salt, and black pepper.
  5. Pour the dressing over the corn and mix until evenly coated.
  6. Fold in cotija cheese, cilantro, and jalapeño if using.
  7. Taste and adjust seasoning as needed.
  8. Serve immediately or chill for 30 minutes for enhanced flavor.

Notes

  • You can use frozen corn (thawed and dried) instead of fresh corn.
  • Feta cheese can substitute for cotija if unavailable.
