Description

Soft and chewy oatmeal chocolate chip bars packed with hearty oats and rich semi-sweet chocolate chips. These cozy dessert bars are easy to make with pantry staples and perfect for snacks, gatherings, or quick homemade treats.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups old-fashioned oats
  • 1 1/2 cups semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper or lightly grease it.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
  3. Add the eggs and vanilla extract, then mix until fully combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually mix the dry ingredients into the wet ingredients until a soft dough forms.
  6. Stir in the oats and chocolate chips evenly throughout the batter.
  7. Spread the mixture evenly into the prepared baking pan.
  8. Bake for 25 to 30 minutes, or until the edges are golden brown and the center is set.
  9. Allow the bars to cool completely before slicing into squares.

Notes

  • Do not overbake to keep the bars soft and chewy.
  • Quick oats can be used, but the texture will be softer.
  • Add 1/2 cup chopped walnuts or pecans for extra crunch.
  • For extra warmth, mix in 1 teaspoon cinnamon.
  • Store in an airtight container at room temperature for up to 4 days.
  • Freeze individual bars for up to 3 months.
  • Warm in the microwave for 10–15 seconds before serving for gooey chocolate chips.
