Ingredients
- 1 cup all-purpose flour
- 3/4 cup fine yellow cornmeal
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup granulated sugar
- 2 large eggs
- 1/2 cup unsalted butter, melted
- 1/2 cup plain Greek yogurt
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen blueberries
- 1 tablespoon all-purpose flour, for coating blueberries
- Powdered sugar for serving, optional
Instructions
- Preheat the oven to 350°F (175°C). Grease an 8-inch round cake pan or line it with parchment paper.
- In one large bowl, whisk together the flour, cornmeal, baking powder, baking soda, salt, and sugar.
- Add the eggs, melted butter, Greek yogurt, lemon juice, lemon zest, and vanilla extract to the same bowl. Stir until the batter is smooth and combined.
- Toss the blueberries with 1 tablespoon of flour to help prevent them from sinking.
- Gently fold the blueberries into the batter.
- Pour the batter into the prepared cake pan and spread it evenly.
- Bake for 35 to 40 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
- Dust with powdered sugar before serving, if desired.

- Frozen blueberries can be used directly from the freezer without thawing.
- Use fine yellow cornmeal for the softest texture.
- Store in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
