Ingredients
- 2 tablespoons olive oil
- 300 g chicken sausage, sliced into rounds
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 cup (200 g) dry orzo pasta
- 2 cups (480 ml) chicken broth
- 1/2 cup (120 ml) heavy cream
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1 cup (30 g) fresh spinach
- 1/2 cup (50 g) grated Parmesan cheese
- Juice of 1/2 lemon
Instructions
- Heat olive oil in a large pan over medium heat.
- Add sliced chicken sausage and cook for 4–5 minutes until golden brown.
- Add chopped onion and cook until softened.
- Stir in minced garlic and cook for about 30 seconds until fragrant.
- Add dry orzo and toast lightly for 1 minute, stirring constantly.
- Pour in chicken broth, then add salt, pepper, paprika, and oregano. Bring to a gentle simmer.
- Cook for 10–12 minutes, stirring occasionally, until orzo is tender and liquid is mostly absorbed.
- Lower heat and stir in heavy cream, spinach, and Parmesan cheese until creamy.
- Add lemon juice, stir well, and adjust seasoning if needed before serving.

- Stir occasionally to prevent orzo from sticking.
- Add extra broth or milk when reheating to restore creaminess.
- Customize with vegetables like mushrooms, zucchini, or cherry tomatoes.
