Description

Soft and moist peach cobbler muffins filled with juicy peaches and warm spices, topped with a buttery crumb topping for a comforting dessert-like treat.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh or canned peaches, diced
  • For the topping:
  • 1/3 cup brown sugar
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon cinnamon
  • 3 tablespoons cold butter, cubed

Instructions

  1. Preheat the oven to 180°C (350°F) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, whisk melted butter, eggs, milk, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix gently until just combined.
  5. Fold in the diced peaches evenly into the batter.
  6. In a small bowl, combine brown sugar, flour, and cinnamon for the topping, then cut in cold butter until crumbly.
  7. Divide the batter evenly among the muffin cups.
  8. Sprinkle the crumb topping over each muffin.
  9. Bake for 18 to 22 minutes, or until a toothpick inserted in the center comes out clean.
  10. Allow muffins to cool slightly before serving.

Notes

  • Drain canned peaches well to avoid excess moisture.
  • Avoid overmixing the batter to keep muffins light and fluffy.
  • Add chopped nuts like pecans or walnuts for extra texture.
  • Drizzle a simple glaze for added sweetness.
  • Store at room temperature for up to 3 days or refrigerate for up to 5 days.
  • Freeze muffins for up to 2 months and thaw before serving.
  • Reheat in microwave for 10–15 seconds or warm in oven.
  • Try substituting peaches with nectarines, apples, or berries.
