Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh or canned peaches, diced
- For the streusel topping:
- 1/2 cup all-purpose flour
- 1/4 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/4 cup cold butter, cubed
Instructions
- Preheat oven to 375°F (190°C) and line or grease a muffin tin.
- In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and cinnamon.
- In another bowl, mix melted butter, eggs, milk, and vanilla extract until smooth.
- Combine wet and dry ingredients, stirring gently until just incorporated.
- Fold in diced peaches evenly.
- Prepare streusel by mixing flour, brown sugar, and cinnamon, then cut in cold butter until crumbly.
- Fill muffin cups about 3/4 full with batter.
- Sprinkle streusel topping over each muffin.
- Bake for 18–22 minutes or until a toothpick comes out clean.
- Cool slightly before serving.

- Drain canned peaches well to prevent excess moisture.
- Avoid overmixing the batter for softer muffins.
