Description

Soft and buttery peach cobbler muffins filled with juicy peaches and topped with a crumbly cinnamon streusel, perfect for breakfast or a sweet snack.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh or canned peaches, diced
  • For the streusel topping:
  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 cup cold butter, cubed

Instructions

  1. Preheat oven to 375°F (190°C) and line or grease a muffin tin.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, mix melted butter, eggs, milk, and vanilla extract until smooth.
  4. Combine wet and dry ingredients, stirring gently until just incorporated.
  5. Fold in diced peaches evenly.
  6. Prepare streusel by mixing flour, brown sugar, and cinnamon, then cut in cold butter until crumbly.
  7. Fill muffin cups about 3/4 full with batter.
  8. Sprinkle streusel topping over each muffin.
  9. Bake for 18–22 minutes or until a toothpick comes out clean.
  10. Cool slightly before serving.
