Ingredients
- 1 prepared 9-inch pie crust
- 1 cup chopped pecans
- 1/2 cup brown sugar

- 3 tablespoons cornstarch

- 2 cups whole milk
- 3 large egg yolks
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- Extra pecans for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- Bake the pie crust according to package or recipe instructions until golden brown, then let it cool completely.
- Spread the chopped pecans onto a baking sheet and toast them in the oven for 5 to 7 minutes until fragrant.
- In a saucepan, whisk together the brown sugar, granulated sugar, cornstarch, and salt.
- Slowly whisk in the milk and egg yolks until smooth.
- Cook the mixture over medium heat, stirring constantly, until it thickens into a creamy custard.
- Remove the saucepan from the heat and stir in the butter and vanilla extract.
- Let the custard cool slightly before folding in most of the toasted pecans.
- Pour the filling into the cooled pie crust and refrigerate for at least 4 hours.
- Whip the heavy cream with powdered sugar until soft peaks form.
- Spread the whipped cream over the chilled pie before serving and garnish with extra pecans.
