Description

A fresh and vibrant fruit salad combining sweet pineapple and tangy kiwi, tossed in a light honey-lime dressing for a refreshing and healthy snack or dessert.

Ingredients

  • 2 cups fresh pineapple, peeled and cut into bite-sized chunks
  • 3 ripe kiwis, peeled and sliced
  • 1 tablespoon honey
  • 1 tablespoon fresh lime juice
  • 1 teaspoon lime zest
  • 2 tablespoons fresh mint leaves, finely chopped (optional)

Instructions

  1. Prepare the fruit by cutting the pineapple into small chunks and slicing the kiwi into rounds or half-moons.
  2. Place the prepared fruit into a large mixing bowl.
  3. In a separate small bowl, whisk together the honey, lime juice, and lime zest until well combined.
  4. Pour the dressing over the fruit.
  5. Gently toss everything together until evenly coated.
  6. Sprinkle chopped mint on top if using.
  7. Let the salad sit for 5–10 minutes before serving to allow flavors to blend.

Notes

  • Best served fresh for optimal flavor and texture.
  • Canned pineapple can be used but should be well-drained.
  • Add other fruits like strawberries, mango, or blueberries for variation.
  • For extra crunch, include shredded coconut or chopped nuts.
  • Maple syrup can be used instead of honey for a different flavor.
  • A pinch of chili flakes can add a sweet-spicy twist.
