Description

Soft, fluffy, and slightly sweet Filipino street-style hotcakes with a nostalgic flavor, brushed with margarine and sprinkled with sugar.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1/2 cup white sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup water
  • 1 egg
  • 2 tablespoons evaporated milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon yellow or orange food coloring (optional)
  • Margarine, for brushing
  • Sugar, for sprinkling

Instructions

  1. In a bowl, combine flour, cornstarch, sugar, baking powder, and salt. Mix well.
  2. In another bowl, whisk together water, egg, evaporated milk, vanilla extract, and food coloring until smooth.
  3. Gradually pour the wet ingredients into the dry ingredients, stirring gently until a smooth batter forms. Do not overmix.
  4. Heat a non-stick pan over low to medium heat and lightly grease it.
  5. Pour small amounts of batter onto the pan to form round pancakes.
  6. Cook until bubbles appear on the surface, then flip and cook the other side until lightly golden.
  7. Remove from the pan, brush with margarine, and sprinkle sugar on top while warm.
  8. Stack and serve immediately.

Notes

  • Do not overmix the batter to keep the hotcakes soft and fluffy.
  • Use low to medium heat to avoid burning while ensuring even cooking.
  • Food coloring is optional but gives the classic street-style look.
  • You can adjust sugar levels to taste.
