Ingredients
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1/2 cup white sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1 cup water
- 1 egg
- 2 tablespoons evaporated milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon yellow or orange food coloring (optional)
- Margarine, for brushing
- Sugar, for sprinkling
Instructions
- In a bowl, combine flour, cornstarch, sugar, baking powder, and salt. Mix well.
- In another bowl, whisk together water, egg, evaporated milk, vanilla extract, and food coloring until smooth.
- Gradually pour the wet ingredients into the dry ingredients, stirring gently until a smooth batter forms. Do not overmix.
- Heat a non-stick pan over low to medium heat and lightly grease it.
- Pour small amounts of batter onto the pan to form round pancakes.
- Cook until bubbles appear on the surface, then flip and cook the other side until lightly golden.
- Remove from the pan, brush with margarine, and sprinkle sugar on top while warm.
- Stack and serve immediately.

- Use low to medium heat to avoid burning while ensuring even cooking.
