Description
A refreshing homemade rhubarb soda made with tangy rhubarb syrup, lemon juice, and chilled sparkling water for a bright, lightly sweet drink.
Ingredients
- 4 cups chopped fresh rhubarb
- 1 cup granulated sugar
- 3 cups water
- 1 tablespoon fresh lemon juice
- 3 cups chilled sparkling water or club soda
- Ice cubes, for serving
- Lemon slices or fresh mint, for garnish (optional)
Instructions
- Place the chopped rhubarb, sugar, and water in a medium saucepan over medium heat.
- Stir well and simmer for 15–20 minutes, until the rhubarb is soft and breaks apart.
- Remove the saucepan from the heat and let the mixture cool slightly.
- Strain the liquid through a fine mesh sieve into a bowl or pitcher, pressing gently to extract the syrup, then discard the solids.
- Stir in the fresh lemon juice and chill the syrup in the refrigerator until cold.
- Fill glasses with ice and pour about 1/3 cup rhubarb syrup into each glass.
- Top each glass with chilled sparkling water or club soda and stir gently.
- Garnish with lemon slices or fresh mint, if desired, and serve immediately.
Notes
- Use frozen rhubarb directly from the freezer if fresh rhubarb is unavailable.
- Adjust the sugar to make the soda sweeter or more tart.
- Add strawberries, basil, fresh ginger, or lime juice for variations.
- Store rhubarb syrup separately from sparkling water to keep the soda fizzy.
- Refrigerate syrup in an airtight container for up to 1 week or freeze for up to 3 months.
