Description

A refreshing homemade rhubarb soda made with tangy rhubarb syrup, lemon juice, and chilled sparkling water for a bright, lightly sweet drink.

Ingredients

  • 4 cups chopped fresh rhubarb
  • 1 cup granulated sugar
  • 3 cups water
  • 1 tablespoon fresh lemon juice
  • 3 cups chilled sparkling water or club soda
  • Ice cubes, for serving
  • Lemon slices or fresh mint, for garnish (optional)

Instructions

  1. Place the chopped rhubarb, sugar, and water in a medium saucepan over medium heat.
  2. Stir well and simmer for 15–20 minutes, until the rhubarb is soft and breaks apart.
  3. Remove the saucepan from the heat and let the mixture cool slightly.
  4. Strain the liquid through a fine mesh sieve into a bowl or pitcher, pressing gently to extract the syrup, then discard the solids.
  5. Stir in the fresh lemon juice and chill the syrup in the refrigerator until cold.
  6. Fill glasses with ice and pour about 1/3 cup rhubarb syrup into each glass.
  7. Top each glass with chilled sparkling water or club soda and stir gently.
  8. Garnish with lemon slices or fresh mint, if desired, and serve immediately.

Notes

  • Use frozen rhubarb directly from the freezer if fresh rhubarb is unavailable.
  • Adjust the sugar to make the soda sweeter or more tart.
  • Add strawberries, basil, fresh ginger, or lime juice for variations.
  • Store rhubarb syrup separately from sparkling water to keep the soda fizzy.
  • Refrigerate syrup in an airtight container for up to 1 week or freeze for up to 3 months.
