Ingredients
- 4 ripe peaches, halved and pitted
- 1 tablespoon (15 ml) olive oil
- 120 g goat cheese (chèvre)
- 3 tablespoons (45 ml) honey
- 1 teaspoon fresh thyme leaves
- 2 tablespoons crushed pistachios or pecans (optional)
- Pinch of sea salt
Instructions
- Preheat a grill or grill pan to medium heat.
- Lightly brush the cut sides of the peaches with olive oil.
- Place peaches cut-side down on the grill and cook for 3–4 minutes until grill marks appear and peaches soften slightly.
- Remove the peaches from the grill and let them cool briefly.
- Arrange peaches on a serving plate and spoon goat cheese into the center of each peach half.
- Drizzle honey generously over the peaches.
- Sprinkle with fresh thyme, crushed nuts if using, and a pinch of sea salt before serving.
Notes
- Use nectarines instead of peaches for a firmer texture.
- Add balsamic glaze for extra depth of flavor.
