Description

Elegant grilled peaches topped with creamy goat cheese, sweet honey, and fresh thyme for a simple yet flavorful dessert or appetizer.


Ingredients

  • 4 ripe peaches, halved and pitted
  • 1 tablespoon (15 ml) olive oil
  • 120 g goat cheese (chèvre)
  • 3 tablespoons (45 ml) honey
  • 1 teaspoon fresh thyme leaves
  • 2 tablespoons crushed pistachios or pecans (optional)
  • Pinch of sea salt

Instructions

  1. Preheat a grill or grill pan to medium heat.
  2. Lightly brush the cut sides of the peaches with olive oil.
  3. Place peaches cut-side down on the grill and cook for 3–4 minutes until grill marks appear and peaches soften slightly.
  4. Remove the peaches from the grill and let them cool briefly.
  5. Arrange peaches on a serving plate and spoon goat cheese into the center of each peach half.
  6. Drizzle honey generously over the peaches.
  7. Sprinkle with fresh thyme, crushed nuts if using, and a pinch of sea salt before serving.
