Description

Sweet, tender, and glossy candied pineapple infused with rich syrup and tropical flavor, perfect as a dessert or topping.


Ingredients

  • 1 medium fresh pineapple, peeled, cored, and cut into chunks (about 4 cups / 600 g)
  • 1 cup granulated sugar (200 g)
  • 1/2 cup water (120 ml)
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract (optional)
  • 1/4 teaspoon ground cinnamon (optional)
  • Pinch of salt

Instructions

  1. Prepare the pineapple by peeling, coring, and cutting it into evenly sized chunks.
  2. In a saucepan over medium heat, combine sugar and water, stirring until fully dissolved to form a syrup.
  3. Bring the syrup to a gentle simmer, then add the pineapple chunks.
  4. Cook for 20–25 minutes, stirring occasionally, until the pineapple becomes soft and translucent.
  5. Add honey, lemon juice, and a pinch of salt, stirring to combine.
  6. Optionally add vanilla extract and cinnamon for extra flavor.
  7. Continue cooking for another 10–15 minutes until the syrup thickens and coats the pineapple.
  8. Remove from heat and allow to cool slightly; the syrup will thicken further as it cools.
  9. Serve warm or store for later use.

Notes

  • Fresh pineapple gives the best texture and flavor, but canned can be used if well drained.
  • Add grated ginger for a spicy twist.
  • Substitute part of the sugar with brown sugar for a deeper caramel flavor.
  • Orange juice can replace lemon juice for a different citrus profile.
  • If syrup thickens too much during storage, add a splash of water when reheating.
