Ingredients
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 1 teaspoon vanilla extract
- 1/2 cup fresh blueberries
- 1/2 cup white chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, cream butter and sugar together until light and fluffy.
- Mix in the egg, lemon zest, lemon juice, and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet ingredients and stir until a soft dough forms.
- Gently fold in blueberries and white chocolate chips if using.
- Scoop dough portions onto the prepared baking sheet, spacing them a few inches apart.
- Bake for 10–12 minutes until the edges are lightly golden.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
- Use frozen blueberries directly from the freezer to reduce excess moisture.
- Chill the dough briefly if cookies spread too much.
- Add a lemon glaze for extra citrus flavor.
- Dried blueberries can be used for a chewier texture.
