Description

Soft and refreshing lemon blueberry cookies packed with bright citrus flavor and bursts of juicy blueberries in every bite.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh blueberries
  • 1/2 cup white chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream butter and sugar together until light and fluffy.
  4. Mix in the egg, lemon zest, lemon juice, and vanilla extract until smooth.
  5. Gradually add the dry ingredients to the wet ingredients and stir until a soft dough forms.
  6. Gently fold in blueberries and white chocolate chips if using.
  7. Scoop dough portions onto the prepared baking sheet, spacing them a few inches apart.
  8. Bake for 10–12 minutes until the edges are lightly golden.
  9. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
