Ingredients
- For the marinated onions:
- 1/2 red onion, thinly sliced
- 2 tablespoons red wine vinegar
- 1 teaspoon honey
- 1/4 teaspoon salt
- For the salad:
- 5 cups watermelon, cubed
- 1 cup cucumber, sliced
- 3/4 cup feta cheese, crumbled
- 2 tablespoons fresh mint, chopped
- 2 tablespoons fresh basil, chopped
- 1 tablespoon olive oil
- 1 tablespoon lime juice
- 1/4 teaspoon black pepper
Instructions
- In a small bowl, combine sliced red onion, red wine vinegar, honey, and salt. Let sit for 10–15 minutes to marinate.
- In a large bowl, add watermelon cubes, cucumber slices, feta cheese, chopped mint, and chopped basil.
- Drain excess liquid from the marinated onions and add them to the salad.
- Drizzle olive oil and lime juice over the salad.
- Gently toss everything together until combined.
- Sprinkle with black pepper and serve chilled.
