Description

Ingredients

  • For the marinated onions:
  • 1/2 red onion, thinly sliced
  • 2 tablespoons red wine vinegar
  • 1 teaspoon honey
  • 1/4 teaspoon salt
  • For the salad:
  • 5 cups watermelon, cubed
  • 1 cup cucumber, sliced
  • 3/4 cup feta cheese, crumbled
  • 2 tablespoons fresh mint, chopped
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • 1/4 teaspoon black pepper

Instructions

  1. In a small bowl, combine sliced red onion, red wine vinegar, honey, and salt. Let sit for 10–15 minutes to marinate.
  2. In a large bowl, add watermelon cubes, cucumber slices, feta cheese, chopped mint, and chopped basil.
  3. Drain excess liquid from the marinated onions and add them to the salad.
  4. Drizzle olive oil and lime juice over the salad.
  5. Gently toss everything together until combined.
  6. Sprinkle with black pepper and serve chilled.
